Happy Thursday! As many of you know, I love to cook. I occasionally post pictures of food I make on Instagram, so I thought I would try it here and see how it goes. Let me know what you think!
We moved to Portugal almost five weeks ago (can you believe it?), and between unpacking and acclimating to a new city, I haven’t had a lot of time to research local cuisine. So I thought I’d start small, with a simple recipe for sautéed Portuguese long beans, known here as Feijão-metro. I found these long, flat beans at the store today, and thought, I can figure out what to do with these, right?

Of course, your girl started with a Google search:

I looked up a recipe for a simple Portuguese-style sauté with sliced garlic and paprika, called Feijão-metro Salteado.
Step 1: Wash, trim, and cut the beans.

Step 2: Blanch in boiling, salted water for 2 minutes, then plunge into an ice bath, or just rinse with really cold water to stop the cooking. Store in the fridge until dinner is almost ready.


Step 3: Sauté beans in a hot skillet with olive oil, 3 or 4 big cloves of sliced garlic, and a healthy sprinkle of paprika for 3 to 5 minutes, depending how much bite you want to your beans. (I went with about 3 minutes.) The recipe said to deglaze the pan with white wine, but I didn’t have any, so I just added a big squeeze of fresh lemon juice at the end, and a little salt and pepper. That’s it!

We had ours with some simple roasted salmon and rice. Lisa said we should have this again, so I’m taking that as a win! Enjoy!
